Science of Smoking and Cooking Wild Game

Smoking and cooking can be a complete mystery and slightly intimidating to many people, but there is something about that smokey flavor that tantalizes the taste buds! Join Dr. Jeff Sindelar of UW-Madison’s Meat Science Department and Jeff Warren of Pro-Smoker to learn more about the tricks and techniques of smoking wild game. The program will be offered at the Horicon Marsh Education and Visitor Center on Tuesday, December 4th from 6:30-8:30pm. Registration and fee required.
What cook temperatures are ideal (and why)? How do you get that perfect smoke color and flavor on your product? What is the right equipment for the job? What should you look out for while smoking and cooking? The answers to these (and my more) questions will be addressed during the “Science of Smoking and Cooking” session at this year’s wild game seminar. We will learn about the fundamental elements of smoking and cooking so you can become not only proficient but successful in your wild game cooking ventures. Plus, we’ll sample some different types of smoked meat and answer questions about the equipment and processes used!
The Horicon Marsh Education and Visitor Center is located at N7725 Highway 28 between the cities of Horicon and Mayville. Please use the lower level entrance. Registration and $20 fee is required to participate in this program. Payment of cash or check can be made the night of the event.
